Do you ever get to the end of the weekend and think, “Have I had any veggies at all?” Do you want to start your week off as healthy as possible and think that Sunday night is a good place to start? Are you secretly craving pizza? Well, I might have the answer to your prayers. This gorgeous (and healthy) dish is inspired by Jane Kennedy – she is definitely one of my favourite healthy cooking inspirations.
This pizza is packed full of healthy veggies, is gluten free and it satisfies those pizza cravings. Give it a whirl next Sunday (or any day really) and let me know what you think!
Sunday Night Pizza (serves 1)
Base:
1/2 medium zucchini, grated
1/4 cup grated cheese
1 egg, beaten
salt, pepper, cayenne pepper
